Ice types in Lisbon
Sphere, large cube, Hoshizaki, rectangular, Collins and crushed ice — sizes, packaging and what each one is for.
Every drink calls for its own ice. Here are the six formats we make and deliver in Lisbon, with real sizes, packaging and what each one is for.

Sphere ice
Ø 50 mm · 25 per bagØ 55 mm · 20 per bagØ 60 mm · 16 per bagØ 65 mm · 16 per bag
A sphere has the smallest surface for its volume, so it melts more slowly than any other shape. It's the go-to for whisky, negronis and old fashioneds in a rocks glass, keeping the last sip tasting like the first. Pick the size by the glass: 50–55 mm for narrow rocks glasses, 60–65 mm for wide ones.

Large cube 50×50×50 mm
50×50×50 mmsolid, no trapped air
A five-centimetre cube fills most of a rocks glass and chills without diluting. It's ideal for neat spirits, old fashioneds and any stirred drink served short. At home, it's the ice that makes a whisky feel like it was poured at a bar.

Hoshizaki cubes
28×28×32 mm2 kg and 5 kg bags
The workhorse of every bar: hard, dry cubes from Japanese Hoshizaki machines. They don't stick together in the bag, survive the shaker and suit soft drinks, juices, terrace G&Ts and shaken cocktails. It's also the right ice for filling bottle tubs at a party.

Rectangular ice 50×50×70 mm
50×50×70 mmsolid block
Taller than the 5 cm cube, this block is made for signature cocktails in wide, tall glasses. Its top sits level with the drink, leaving room for garnish while keeping dilution low for the whole serve.

Collins spear 35×35×120 mm
35×35×120 mmfor highball glasses
One long spear that fills a tall glass top to bottom. It keeps the fizz in a gin and tonic, Tom Collins or whisky highball longer than a glass packed with small cubes — and guests notice how clean it looks.

Crushed ice (frappé)
2 kg and 5 kg bags
Fine ice for caipirinhas, mojitos, juleps, tiki drinks and seafood or fruit displays. It chills very fast thanks to its large surface. Keep it out of the freezer and use it the same day — refrozen crushed ice turns into one solid lump.

Packaging and storage
All ice leaves production in sealed, labelled food-grade polythene bags. Solid formats and Hoshizaki cubes keep for weeks in a −18 °C freezer without losing their shape. Crushed ice should be used on the day of delivery.
Full specs for every format are in the catalogue of Iceology, the producer behind our ice.
