Hoshizaki cubes (28×28×32 mm) are all-purpose ice. The 5 cm cube is solid and melts far more slowly — it's for spirits and stirred cocktails.

Solid formats and cubes keep for weeks in a −18 °C freezer. Crushed ice should be used the same day.

It's often hollow or full of air. Dense, dry ice — like ours from Hoshizaki machines and solid moulds — lasts much longer in the glass.
